The FABulous Cinderella Cheesecake

Work like a slave, eat like a king


California cuisine is all about the presentation of the dish. FAB taps into this: the willingness of an audience to try out the crazy ideas generated by energetic and enthusiastic staff. But what makes this newly established restaurant so special? FAB combines (mostly homemade) American recipes with a European touch, and offers the delicious results to the locals.
My Salmon Eggs Benedict came neatly presented on a large square plate with a portion of fresh fruit salad. My culinary interest was sparked by the unusual combination of eggs on gluten-free bread spliced with smoked salmon, with a side of crispy ‘breakfast’ potatoes that tasted exactly like French fries. The fruit salad, made up of fresh pineapple, melon, raspberries and blueberries, perfectly reflected FAB’s philosophy of “keeping things interesting”. It was an excellent American brunch – apart from the fact that the dish was served quite cold.

And then I ordered the cheesecake. To my delight, the suspense quickly gave way to an unexpectedly magnificent cheesecake-shaped reward. People rarely realise the hard work that goes into producing such a creamy, fluffy dessert with a hard crusting on the bottom. I call it a Cinderella-sort of cake: someone works their hands to the bone behind the scenes in order to produce something truly beautiful. To be honest, it made my Sunday. FAB’s first-class cheesecake is just sweet enough, smooth and creamy, with a hint of tartness. But that’s not all. It was served with a perfectly blended raspberry sauce to make sure I squeezed every last moment out of summer. You’ll want to keep on eating … at least, for more than one bite.

By contrast, the homemade ginger ale, fresh but not too sweet, slightly turned me off. The taste of the lemonade had a real citrusy bite to it, but the glass was packed with crushed ice, making it too cold for the season. Next time, I’ll order a tea instead.
I would definitely recommend the new FAB restaurant not only for Sunday brunch, but also for a coffee with a slice of amazing Cinderella cheesecake.
